Hello! 
I'm a beginner, I currently have installed the official firmware B209. I want to install this ROM and I have a few questions: 
1. Do I need to do first root and what method do you recommend? 
2. Do I need to install a custom recovery, and which do you recommend? 
3. Are all clean if I select wipe data / factory reset?

1. I think not. This rom comes rooted.

2. You must first unlock bootloader, then install recovery, I prefer TWRP.

3. Yes, before installation you need to do a full wipe, but make a backup first of your stock rom, just in case.

After you install custom recovery yoy need to wipe Dalvik cache, Cache, Cust, Data, System, Internal storage. Then you can flash thi ROM.

How can i instal KitKat status bar menu

You can do that with GravityBox in status bar section.

Is there a way to "disable" the Picasa sync in the Gallery?

I have a delay opening the gallery...

 

And... Can I replace the AOSP Gallery with Y300's Stock Gallery? Or the stock's gallery isn't compatible with the camera?

That's not possible, at least to get it exactly the same, but I did mention before that I will look into it. I was focused fixing on all of the bugs but now that I've done that I'll look into the tiled menu quick settings again soon.

Press the options key in the gallery and then turn google photo sync off. You could even enable the firewall in blacklist mode and select to block the gallery.

 

It's not possible to have the Huawei gallery without it also adding the camera. The camera and gallery are merged into 1 app with 2 icons.

And... it's safe to remove some pre-installed apps (like News or Youtube)?

I can send you the stock huawei gallery and camera if you want.

Is it possible to replace the huawei camera with google one, but keep the huawei gallery?

I wanted to say one thing that I forgot, after installing the ROM, the phone is restarted by itself for a moment, why?

 

It does the same to me, every time i install stock based ROMs, modified or unmodified

Yes you can, but there is no point of it, not on the new rom install, everything works fluid and smooth I guess.

For file transters bluetooth will work fine with all kernels. It's stereo bluetooth headsets that custom kernels currently have a problem with on stock based ROM's. Only the official kernel allows the stereo headsets to work correctly.
